Butter fried chicken with mexican sauce

This post was actually long overdue. I could have posted it months ago but forgot the name of the sauce my Mexican dorm mate taught me. Anyway, he already moved to an apartment outside the university campus so I did not get the chance to ask him. Hence, I decided not to name it but instead give full credits to Octavio for this great find sauce. I cooked this during one of my exploratory kitchen rushes.
The main dish here was the butter fried chicken. By its name, nothing so special. I just did the usual frying procedure;
- Added chopped garlic and onions
- Poured coriander and red chili powder and black pepper
- And of course right amount of salt
When the chicken meat was almost good to go, I added green bell pepper strips, stir fried a little bit and voila! butter fried chicken is done (my style).
To make the sauce.
- Toast at least 2 big tomatoes with a frying pan (no oil) together with the dried (preferred) or fresh green chilis (at least 2 pcs or as many as you can take). Occasionally, roll the tomatoes and chilies in the frying pan to distribute heat.
- Repeat the above process until some skin of the tomatoes and chilies get toasted (black color).
- Take them out from the pan and put them into a blender. Add at least 3 garlic cloves (peeled).
- Put small amount of salt.
- Blend them altogether to make paste (see photo below).
And basically you’re done. You may dip the chicken into the sauce or put the sauce all over your main dish.

..what do you mean hot, the sauce? Yes because there are chilies in it. Boiling? No it’s not. You just have to blend the ingredients altogether.

Ummm.. mukhang masarap. I like the way the sauce looks. I am quite particular about how food looks. Presentation of food adds to its palatability.
